The seventh session of “Cocktail Spirits Online” was held on Monday, March 22, from 11:00 to 13:20.
This time, Mr. Junpei Kanemaru of Touji introduced us to the inside of the distillery from “Kodama Distillery” in Miyazaki Prefecture. He told us about the characteristics of the company, which was founded in 1818, and how they make “Koji” by hand, and how they use very little machinery and traditional manufacturing methods. This was followed by a question-and-answer session. We tasted the products from the “sample kit” that was delivered to the participants in advance. Through the tasting, participants showed a strong interest in the shochu culture that has been handed down from generation to generation, including the culture of “Koji” and “Fermentation” not found in France, and the importance of water.
The three tasting items were： Mushagaeshi Genshu（Jufuku Distillery), Yam atozakura (Yamatozakura Distillery), AOKAGE (Yanagita Distillery)
